Consulting / Sports Venues & Concessions

Concessions and F&B consulting for sports venues.

Sports complexes, stadiums, ballparks and tournament facilities run on speed and margin. We design concession programs that look chef-ready, run with a young crew and actually make money.

Experience

From one concession stand to entire venue portfolios.

Zach has built F&B strategy for national multi-venue sports portfolios, reviewed venue P&Ls and cost performance across complexes in several states, and designed concession buildouts from the menu to the last piece of equipment. Most of those clients would rather you think they figured it out themselves. We're fine with that.

One recent example: a multi-outlet sports venue saw a 300% improvement in bottom line and 200% revenue growth across several outlets, with zero CapEx.

Before that, we spent years in high-volume quick service, where seconds per transaction are the whole game.

  • Concession stand menu design and menu engineering
  • Equipment packages built around ventless cooking, speed ovens and fryers
  • Concession stand layout, renovation and buildout project management
  • Smoothie, acai and specialty beverage programs
  • Sponsorship and pouring-rights evaluations vs. self-operating
  • Cross-venue cost performance analysis and benchmarking
  • Recipe cards, operations manuals and training for young staff
  • Stadium concessions, suite catering and team and player meal programs

What we've learned

Rules we build every concession program on

Fixed menus beat build-your-own

Every choice you give a guest adds seconds to the line. Fixed builds keep the line moving and the food consistent.

Cost everything, including the ketchup

Condiments, labels, boats and lids are where concession margins disappear. They go in the recipe cost.

One mise en place, many items

Nachos off the same line as the deli. Fewer SKUs, less waste, easier training.

Common questions

Concessions FAQ

How do I make my concession stand more profitable?

Tighten the menu, price it through menu engineering, cost every component including packaging, and design the line for speed. Most stands lose money on complexity, not on traffic.

Should we take a sponsor's offer to run our F&B category?

Sometimes. We model the guaranteed sponsorship income against what you'd make self-operating, including royalties, staffing and growth upside, so you can decide with real numbers.

Do we need a hood for our concession stand?

Not always. Ventless fryers and speed ovens can open up menus in spaces where a ducted hood isn't practical. Check with your local authority, but it's often a big savings.
