Too many choices
Build-your-own anything slows the line. Every option is another question at the window and another few seconds per guest. In a 15-minute break between games, those seconds are lost sales. Fixed builds, one size, a tight menu.
Costs nobody counted
Concession margins disappear in the small stuff: ketchup cups, cheese for the nachos, food boats, labels, lids and napkins. If your item cost doesn't include them, your price is wrong. Cost every component, then price through menu engineering, not gut feel.
A menu your crew can't execute
Most concession staff are young and part time. The menu needs to look chef-made but run on simple steps. Share mise en place across items. The same prep that builds a deli sandwich can build a plate of loaded nachos.
The wrong equipment
Equipment should match the menu and the volume. Ventless fryers and high-speed ovens can unlock a real menu without a full hood system. Hot-holding drawers can replace a lot of clutter. Buy for your peak hour, not your average one.
Sponsorship deals you didn't model
Brands will offer guaranteed money for exclusive rights to a category. Sometimes that's the right call. Sometimes your own program would make more. Model both, including royalties, staffing, growth and how long you're locked in.
